Sanitary regulations require, in the surfaces of environments where food products are produced or handled, the total absence of right-angled corners and edges; this is to avoid deposits of dirt and possible sources of bacterial load, which would be difficult to remove during normal cleaning steps.
In the junctions between floor and wall coverings and between vertical surfaces (whether concave or convex) there must always be a so-called “shelled” shape, made with suitable dimensional and color characteristics, as well as suitable materials.
